Healthy Pickled Beets

A simple no-sugar-added, naturally tangy recipe that keeps the beets crisp and flavorful.

Ingredients

  • 4 medium cooked beets, peeled and sliced
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 tsp sea salt
  • 1 garlic clove, sliced
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds
  • 1–2 sprigs fresh dill (optional)
  • 1 small bay leaf (optional)

Instructions

  1. Cook the beets: Roast or steam until fork-tender. Cool, peel, and slice.
  2. Make the brine: Add vinegar, water, salt, garlic, peppercorns, mustard seeds, and bay leaf to a saucepan. Bring to a gentle simmer for 2–3 minutes.
  3. Fill the jar: Pack the sliced beets into a clean glass jar.
  4. Add brine: Pour the warm brine over the beets until completely covered.
  5. Cool and refrigerate: Let cool, then seal and refrigerate.
