Oreo Cream Croffles with Chocolate Drizzle

Oreo cream croffles bring together three textures that work beautifully on one plate: flaky pastry, soft whipped cream, and crunchy chocolate cookie pieces. A little melted chocolate adds a finishing drizzle without turning the whole dessert into a heavy chocolate layer. The base is a croffle—unbaked croissant dough cooked in a waffle maker. Its ridges give the topping somewhere to settle, while the buttery edges stay exposed and crisp. For this version, keep the cream plain and let the cookies provide most of the sweetness. Prepare the toppings before you start assembling. Once the cream touches the pastry, the dessert is at its best for a fairly short time. Having everything ready lets you serve it while the cookie crumbs still have some crunch. Ingredients Makes 4 small dessert croffles. 4 small unbaked croissants, approximately 60–75 g each, prepared according to their package instructions 180 ml cold whipping cream, suitable for whipping 8 Oreo cookies, divided 35 g dark or semisweet chocolate, finely chopped A little butter for the waffle plates, only if the manufacturer requires greasing Allow about 15 minutes for topping preparation, approximately 4–7 minutes of cooking per batch, and time for the pastry to cool. Thawing and proofing time is additional. Prepare the cream and cookies Crush four cookies, including their filling, into coarse crumbs. Keep a mixture of fine crumbs and small pieces instead of grinding everything into powder. Cut or gently break the remaining cookies into halves for decorating. Whip the cold cream until it holds soft-to-medium peaks. It should stay on a spoon while still looking smooth. Refrigerate it while you prepare the pastry. Melt the chocolate gently in a heatproof bowl over barely simmering water, keeping the bowl above the water. Remove from the heat when smooth and let it cool until just warm but still fluid. Cook and assemble Preheat the waffle maker fully. Grease lightly only if needed, then place the prepared croissant dough on the plates with room to spread. Close the lid gently. Cook until deeply golden, beginning to check around 4 minutes. The exact timing depends on the dough and appliance. Check the first croffle inside: its center should be set and layered, with no wet, gummy dough. Adjust the heat or time for the remaining pieces if necessary. Transfer to a rack and cool until barely warm or at room temperature. Pipe or spoon the whipped cream along each croffle. Drizzle with the cooled melted chocolate and scatter over the crumbs. Finish each portion with two cookie halves and serve promptly. Keep the chocolate drizzle light A fork is useful for making thin lines. Dip its tips in the melted chocolate and move it back and forth above the cream. Thick spoonfuls can set into a hard layer that is less pleasant to cut through. The chocolate must not be hot when it meets the cream. If it has thickened too much to drizzle, warm it gently again and let it settle before decorating. A simpler variation For a quicker finish, skip the chocolate and fold half the cookie crumbs into the whipped cream just before assembling. Sprinkle the rest on top. The cream will have a speckled cookies-and-cream appearance, and you will still get a little crunch from the final crumbs.
