Ingredients
1 box (3 oz / 85 g) orange-flavored gelatin
1 cup boiling water
½ cup cold water
1 package (3.4 oz / 96 g) instant vanilla pudding mix
1 cup cold milk
1 container (8 oz / 225 g) whipped topping, thawed
1 can (15 oz / 425 g) mandarin oranges, drained
1 cup mini marshmallows
½ cup sweetened shredded coconut, optional
½ cup crushed pineapple, well drained, optional
Fresh orange zest or orange slices, for garnish
Instructions
1. Prepare the gelatin
Place the orange gelatin in a large mixing bowl. Pour in the boiling water and whisk until the gelatin has completely dissolved.
Add the cold water and stir well. Allow the mixture to cool for about 10–15 minutes. It should be cool but not completely set.
2. Make the creamy pudding mixture
In a separate bowl, whisk together the instant vanilla pudding mix and cold milk for about 1–2 minutes, until thick and smooth.
Add the pudding mixture to the cooled orange gelatin and whisk until everything is well combined.
3. Fold in the whipped topping
Gently fold in the thawed whipped topping. Use a spatula and fold rather than aggressively stirring so the mixture stays light and fluffy.
4. Add the fruit and marshmallows
Carefully fold in the drained mandarin oranges and mini marshmallows.
If using coconut and crushed pineapple, gently fold those in as well. Make sure the pineapple is thoroughly drained so the salad doesn’t become watery.
5. Chill
Cover the bowl and refrigerate for at least 2–4 hours, preferably overnight. The mixture will become thicker and creamier as it chills.
6. Serve
Give the salad a gentle stir before serving. Garnish with a few mandarin orange segments, a little orange zest, or a small dollop of whipped topping.
