Chocolate hazelnut spread is delicious on warm pastry, but pairing it with cream cheese gives the sweetness a little balance. Small dollops of lightly sweetened cream cheese sit between the croffle’s ridges, while a thin Nutella drizzle connects the flavors without covering every bite.

4 small unbaked croissants, approximately 60–75 g each, thawed and proofed if required by the package
150 g full-fat block-style cream cheese, softened enough to mix
25 g powdered sugar, sifted
70 g Nutella or another chocolate hazelnut spread
A little butter for the waffle maker, only if required
Allow about 10–15 minutes for preparation, roughly 4–7 minutes of cooking per batch, and a short cooling period. Dough preparation time is additional.
Make the toppings
Beat the cream cheese briefly until smooth. Add the powdered sugar and mix just until combined, scraping the sides of the bowl as needed.
Refrigerate the mixture while you cook the croffles. If it is too soft to pipe, allow it to firm up before using.
Put the Nutella in a heatproof bowl and stand it over warm water until it loosens enough to drizzle. Stir and let it cool to lukewarm. Do not add water directly to the spread.
Cook and decorate
Heat the waffle maker according to its instructions and lightly grease the plates only if necessary.
Add the prepared croissant dough, leaving room for it to spread. Close gently and cook until golden and crisp, starting to check around 4 minutes.
Inspect the first croffle’s center to make sure the dough is cooked through rather than gummy. Adjust later batches if needed.
Let the finished croffles rest separately on a rack until barely warm.

Get a smooth finish without too much sugar
