This old recipe from my grandmother is a perfect example of this.
She often made it on cold days, with simple ingredients that everyone had at home.
It is nutritious, affordable and – as my grandmother said – “a dish that fills the heart, not just the stomach ❤️”.
Directions
🥕Ingredients (serves 4):
3 potatoes, peeled and diced
2 carrots,
sliced, 1 red onion, finely chopped

2 cloves garlic, finely chopped;
1 tablespoon olive oil or butter; 500 ml vegetable stock (or chicken stock); 1 bay leaf; 1 teaspoon paprika; salt and pepper to taste; fresh parsley or thyme for garnish. Preparation time: 10 minutes; Cooking time: 30 minutes; Total time: 40 minutes .
Preparation:
Heat the olive oil or butter in a large skillet over medium heat.
Sauté the onion and garlic until translucent and fragrant.
Add the potatoes and carrots and sauté for 5 minutes until lightly browned.
Pour in the stock, add the bay leaves and paprika, and bring to the boil.
Reduce the heat to low, cover and simmer for 25-30 minutes until the vegetables are tender.
